Ingredients
1 cup coarsely chopped fennel bulb, green fronds reserved
1 Tbsp. olive oil
1/4 cup white wine
1/4 to 1/2 cup rich vegetable stock
10 cloves garlic
2 sprigs thyme
Pepper
Pinch saffron
Salt
How To Make Fennel Sauce
Easy Recipe Directions:
Preheat oven to 425F.
In a ovenproof skillet, toss fennel, garlic and thyme in olive oil. Roast, stirring occasionaly, until brown, 20 to 25 minutes. Place on stove top over medium heat, add saffron and white wine. Boil 1 minutes. Add 1/4 cup vegetable stock, boil 1 minute more. Let cool 10 minutes.
Purée in a blender. Thin with more stock, if desired; season with salt and pepper to taste.
Reheat before serving.
