1 tsp. salt
1-1/2 cups grated cheddar cheese
1-1/2 cups milk
2 cups water
2 medium onions, sliced in rings
2 Tbsp flour
3 Tbsp. butter or margarine
4 medium carottes, diagonally sliced
6 potatoes, thinly sliced
dash cayenne
pepper to taste
How To Make Cheese Scalloped Potatoes and Carrots
Easy Recipe Directions:
Heat oven to 375 degree F
Bring water to a boil in large frying pan; add potatoes, onions and carrots. Cover and cook 10 minutes or until tender. Drain.
In medium saucepan, melt margarine; remove from heat. Stir in flour, salt, pepper and cayenne. Add milk, blending well. Bring to a boil over medium heat, stirring until thickened and smooth. Stir in cheese; cook over low heat, stirring constantly until cheese melts.
Layer half of the potatoes, onion and carrot in a lightly greased 9 X 13 (23 X 33 cm) baking dish. Top with half the sauce. Repeat layers. Bake covered for 30 minutes or until potatoes are tender. Remove cover during last 10 minutes of baking.
